I am a food scientist and a graduate student at the University of Georgia, under Dr. Hualu Zhou. I am passionate about food products and technology developments to promote a more sustainable food system. My works focuses on utilizing bioactive compounds and plant proteins to create healthier food products in the market. Besides research, I also have several hobbies such as weightlifting, cooking, food science and technology trivia, and watching movies.













Projects
1. Extraction of plant-based bioactive compounds.
2. Plant protein characterization: quantification (crude and rapid method), particle size and zeta potential, FTIR (Fourier Transform Infrared Spectroscopy), and DSC (Differential Scanning Calorimetry).
3. Other analytical instruments: UV-Spectrophotometer, HPLC, and GC.
4. Plant-protein application: plant-based meat.
5. Product development: reformulation, nutritional labels, and health claims (low sodium, fat, gluten-free, etc).
