I am a food scientist and a graduate student at the University of Georgia. I am passionate about food products and technology developments to promote a more sustainable food system. I work on utilizing bioactive compounds and plant proteins to create more sustainable and healthier food products in the future. Besides research, my hobbies are powerlifting, cooking, trivia, and watching movies.
Projects
1. Extraction of plant-based bioactive compounds such as curcumin from turmeric.
2. Encapsulation of plant-based bioactive compounds; spray drying and freeze drying.
3. Analytical measurement: UV-Spectrophotometer, HPLC, and GC.
4. Plant-protein utilization; plant-based meat and TVP/TPP utilization.
5. Product development; reformulation, nutritional labels, and food reformulations (low sodium, fat, gluten-free, etc).
